Best Bones to Use

For a good jelly-like consistency, use a mix of:

  • Chicken carcasses
  • Chicken wings or feet
  • Turkey necks
  • Beef knuckle bones
  • Lamb ribs or joints
  • Oxtail
  • Marrow bones, but not too many as they can make the broth fatty

For the best set, include joint bones, feet, necks or knuckles rather than only marrow bones.
